This unique Castillo bean is naturally processed with a 24-hour anaerobic fermentation and dried using mechanical silos. Grown in the remote coffee town of Caramata, and farmed by Don Hector and allied producer deeply rooted in the community. Nestled in a rugged mountainous region with steep hills and no paved roads, the farm is only accessible by a two-hour journey on horseback or mule. Getting the coffee out is an adventure in itself, a testament to the dedication and passion behind every bean.
